Recently, I changed my diet. In January, I switched to a Gluten Free diet. About 2 weeks ago, I stopped eating meat. I hope to share some recipes and strategies for vegetarian eating. God willing I can continue eating this way for at least 6 months.
These are some of the things I have been enjoying:
Stir-fry with rice noodles
Black bean salsa on mixed salad greens.
Chickpeas on salad greens.
Tuna on bed of salad greens.
2 bean chili
Hummus with celery.
Almonds roasted w/o salt
Flax Cereal w/ sunflower seeds and soy milk
-------------w/bananas -------------------
Oatmeal w/ a little maple syrup + chopped walnuts.
Oatmeal w/ dried fruit + unsweetened coconut flakes
Black tea instead of coffee.
Water w/ lemon and stevia powder

-----------2 bean Chili-----------
1 onion chopped 1 clove garlic diced 1 red pepper chopped. 1 can stewed tomatoes 1 can black beans 1 can red beans 1 small can of corn
Saute first 3 ingredients in a little veg oil. Add 1 TBSP of chili powder. 1/8 tsp of red pepper a little salt Add the rest of the ingredients stir. Add a little water too.
Easy and delicious.

Thanks for telling us about your new diet - it sounds interesting and tasty! Your two bean chili sounds very good, and easy too! Have you felt different (better?) since you went gluten free?
If I could just give up sugar, I'd have it made!

Monday was the best I have felt in a long, long time. I think it has to do with the diet. I got sugar free tropical popsicles for a treat. They are very good. Cheated and ate chocolate yesterday. I'm trying to back off of the sugar too.

This is really a salad by it's self. I enjoyed it over a bed of salad greens w/ bit of balsamic vinagrette.
1 Carrot diced 1 Celery rib diced 2 scallions diced or 1/4 onion. 1 Tomato diced 1 can of black beans rinsed and drained Juice of 1/4 lemon 1 or 2 Tbsps Olive oil 1/2 tsp of freeze dried cilantro or if fresh cilantro use more 2 dashes of red pepper or more if you like it spicy salt to taste
Mix together. Add black beans last so they will keep their shape.
